Shrimp and Summer Fruit Kabobs

Ripe California peaches, nectarines and plums are threaded onto skewers with shrimp, brushed with a garlic and herb oil, and grilled to perfection. I used to visit my friend Teresa in Brownsville, TX. We would cross the border to this open air vendor/food stand to eat this. The cook did not or could not hide her ingredients, so we know what was put in this dish. You can serve this with rice, beans, or make it into wraps. The ingredients are very forgiving, so feel free to increase or decrease the amount stated. 

Mary's Christmas Shrimp Tree

Quick, easy, and impressive! Cooked shrimp and other colorful munchies are displayed on a Christmas tree created with beet greens wrapped around a cone shape. Vary the size of the cone and type and amount of veggies to personalize this for your party needs. Using purchased sauces for dipping makes this even easier. Display on a colorful Christmas plate and watch the snackers un-decorate!

Dave's Low Country Boil

Famous in the Low Country of Georgia and South Carolina. This boil is done best on an outdoor cooker. It has sausage, shrimp, crab, potatoes and corn for an all-in-one pot all-you-can-eat buffet! 

Canadian Cedar Planked Salmon

The salmon is slow cooked, which produces a rich, smoky flavor. Guests enjoy the wonderful taste of this specially prepared salmon. The plank must be soaked overnight before use. Be sure to use wood that has not been treated with any chemicals. 

Che Guevara's Ceviche

An appetizer of revolutionary proportions. Ceviche includes 'raw' fish that is 'cooked' in lime juice, prep time is a bit long but worth it. Shrimp is optional but suggested.
