Lentil Frankfurter Soup

INGREDIENTS (Nutrition)

  • 1 cup dry lentils, rinsed
  • 2 slices bacon, diced
  • 1/2 cup chopped onion
  • 1 cup chopped celery
  • 1/2 cup chopped carrots
  • 8 cups water
  • 2 cups canned tomatoes
  • 1 bay leaf
  • 6 frankfurters, sliced
  • salt to taste
  • ground black pepper to taste

DIRECTIONS

  1. Saute bacon and onion.
  2. Place lentils, bacon, onion, celery, carrots, water or stock, tomatoes, and bay leaf together in a large pot and simmer until tender, about 45 minutes.
  3. Add sliced wieners and salt and pepper to taste, and continue cooking for about 10 minutes.

easy meal does well with chicken base. if using condensed chicken base omit the salt MORE
