Mmm, delicious! Of course I modified the recipe a bit for my own tastes and they were superb! I used canned black beans instead of kidney & I did put them in the food processor first. For those that said there was something missing...I threw in a chopped jalapeƱo pepper to the bean mixture and pureed it along with the beans. I too didn't use all the water called for and I also mixed the bean and potato mixture up together before making the burritos. I made these into 8 huge burritos and put them in a 11x13" casserole dish and covered them in enchilada sauce and a nice layer of cheese. I chopped up some fresh cilantro just before they were finished and sprinkled it on top. Even my picky kids gobbled them up and wanted more! I'll definitely make these again!

Awesome. Note one way to make mashed sweet potatoes is to heat the oven to 400 and bake them for 40-50 minutes. After letting them cool for a bit, they are much easier to skin and mash.

I loved these, but the rest of my family had mixed feelings. Upon polling them I've learned these would earn something like an average of 3.25 stars from my family.

I discovered this recipe a year ago and my husband can't get enough of it. I have to make it once a month and they are great to freeze so he can heat them up anytime. Friends and family all ask for the recipe. So glad I found it. I leave out the onion and the dish still tastes great. I've used sweet potatoes and then yams, sweet potatoes are the best if you can find them.

These were great! I followed the recipe exactly but instead of making burritos, I made quesadillas. As another reviewer suggested, I mashed the beans and made the filling in a bowl then added it to the onions and garlic. Thanks for the terrific recipe!

Who would have ever thought sweet potato burritos could be so good? The family was skeptical at first but now they absolutely love this dish! Definitely a keeper!

My family loved this unique dinner. It was easy to make and was delicous. I used black beans and left out the water so the beans would not be runny.

Came out pretty darn good. I wouldn't give it 5 stars but I'd make again. Makes quite a few burritos, we had it for 2 days and still had some left over. Good for freezing. Didn't use all the liquid (and substituted veggie broth for the water) as we like our consistency a little thicker.

The spicy kick of the beans mixed with the sweetness of the sweet potatoes combines nicely, especially when served in homemade whole wheat tortillas!

This was really satisfying and tasty. It is very starchy between the sweet potatoes and the beans, but really delicious with a little hot sauce on top. A nice combination of flavors -- mild and sweet with the addition of spicy hot sauce.

I really looked forward to trying this one. When I first made it I realized that I was missing ground cumin (after I had everything mixed). Do not omit that spice, it is key to the taste of the Burritos. I went out and added the cumin the next day and that helped a great deal but I still felt like something was missing but could not put my finger on what it could be.

Followed the recipe except for substituting black beans for the kidney beans called for in the recipe. Overall, I enjoyed the burritos, but not enough to justify the work that goes into the preparation. I probably won't make this one again.

I tried these out of pure curiosity and they ended up being better than I expected! I followed the recipe exactly other than making a smaller batch and using black beans. I thought the bean mixture was excellent. I will definitely make these again!
