The undisputed home of country music, Nashville is a thriving city squarely rooted in down-home tradition. Not surprisingly, the city’s food scene is heavily influenced by Southern cuisine of yore, with “meat and three” restaurants being especially popular. Common lunchtime destinations, these unpretentious establishments serve up a meat main dish with three vegetable sides, and usually top off the meal with cornbread or biscuits. Another regional specialty is fiery fried chicken like the kind served at Prince’s Hot Chicken Shack, a local favorite. Prince’s chicken, fried in a skillet and then served up on white bread, is known to set mouths ablaze for hours. Somehow, though, it always leaves patrons wanting more.

Apple and Onion Beef Pot Roast

Hubby and I liked this change for us- APPLES with ONION -- with beef roast. Since we live in the South - we used a BIG VALDALIA onion & 2 Grannie Smith Apples. Used a well trimed chuck roast--Strained out apple and onion-->>> pureed in blender.--deglased remainder of liquids and added back to apple mixture. Heated through to bubble-- Serve on sliced beef or on side

I just deceased the liquid to 1/2 cup and made it red wine..Good crock recipe.

Crispy Orange Beef

We did not particularly care for this recipe. It was edible, but not enjoyable. I reduced the sugar by just a little because my husband doesn't like his meat too sweet, and I doubled the sauce because we like things saucy. The orange flavor was WAY too strong. It was about all I could taste besides the garlic. Also, the sauce did not really thicken much for me. It was still very watery after more than 20 minutes. Don't think I will be trying this one again.
