Easy Fried Eggplant

I wanted to eggplant since i had never had it before and this was delicious! i did my homework on eggplant before i even tried this. after i washed and peeled it, i soaked it in salt water for a few minutes. I drained and added seasoned salt and pepper. i also added wishbone ranch dressing to the egg and used italian seasoned breadcrumbs. i used enough oil to cover the bottom of the pan and they came out wonderful. I also used some ranch dressing for the dipping sauce. will be using this again-thanks for the post :)

Wedding Cake Frosting

I would like to be able to give this a 4 1/2, it has a very good flavor, but I had to cut the milk in half and even when I did that I added an extra 1/2 cup to a cup of the confectioners sugar. I did need a bit of a thicker consistency though because I was piping this on to cupcakes.

Honey Coconut Salmon

This is good, but quite a bit sweet for my taste. I also agree with other reviewers that you can cut the amounts of the marinade ingredients in half. I only used two pieces of salmon and cut it in half and it was still enough for 4 pieces. I will probably tr this again cutting the butter and coconut in half and the honey and brown sugar by 4-times. With a little tweaking this can be really great.
