I never would have thought to put a little Mexican spin on eggplant like this - I'm so used to the typical Italian/Mediterranean style recipes. But I was pleased with this recipe! I added a sprinkle of red pepper flakes to the oil and used Fresh Tomato Salsa from this site. I chose to leave the skin on the eggplant. Nice recipe to add to the "meatless meal" files, although I think it needs a little something to make it a hearty meal, maybe some rice on the side. Thanks for sharing!
