Too Much Chocolate Cake

Wow, so good!... Totaly satisfies that chocolate craving! I actually left a copy of this recipe on the counter the day before my birthday along with the Satiny Chocolate Glaze recipe others have used as a hint to my husband... He usually makes me a box cake with BC frosting. He took the challenge and now he'll never let me forget how great a baker he is!!! lol... I'll just keep letting him be the baker and I'll be the eater! =)

Awesome Honey Pecan Pork Chops

I have used thin pork chops and chicken breast that I pounded thinner. I also added a bit of minced garlic to the honey sauce. Yummy recipe!

Fried Green Tomatoes with Shrimp Remoulade

This was not only my first time making fried green tomatoes, but also my first time eating them, so my first impression of the fried tomatoes themselves was that they needed some seasoning in the cornmeal. That thought flew out the window when I tasted them with the (mayonnaise-free, THANK YOU!) remoulade! Wow! What a great combination of flavors - this sauce is totally addicting, and perfectly suited for fried green tomatoes. I cannot wait to have the opportunity to serve this to guests. It looks and tastes delicious, and was actually quite easy to prepare. Thanks for sharing!

Seven-Layer Gelatin Salad

I wanted to love this as much as 7 year old me once did...apparently, my tastes have evolved. Didn't *love* the taste and it was VERY time consuming! Doesn't take a ton of hands on time, but make sure you have at least 4 hours available if you plan to make this. Apparently, there's also a big diff between *firm* and *set*, too (and I don't know what it is...I allowed all the layers to set for about the same time, but I had some that didn't meld so the layers SLID OFF at service). This def looks cool and is a great convo piece, but I'd rec making in ind servings for serving ease. I made mine w/a variety of Jello flavors (some sugar free) in red, orange, yellow, green, and blue.

Scalloped Corn

Great side dish. I used low fat sour cream. I do not think you can tell the difference and it helps save some fat and calories since you are using an entire stick of butter! I think I will make this for Christmas dinner.

Double Layer Pumpkin Cheesecake

I used this recipe to make mini cheesecakes. I followed the directions in terms of ingredients (except I used a can of pumpkin pie filling instead of puree + spices), but then I put paper muffin cups into muffin tins, packed a little granola crust into the bottom (graham cracker crumbs mixed with butter until it can be patted down and stays in place, not crumbly), added the cheese filling until the muffin cup was 2/3 full, and then carefully spread some pumpkin pie filling over the top until the filling came to just under the edge of the muffin cup. Then I baked them for 15 minutes at 350F. They turned out awesome and didn't even need whipped cream. :) I made twelve of the mini cheesecakes and still had batter left over so I mixed the remainder of the can of pumpkin pie filling with the remainder of the cheese filling, and poured that into muffin cups (I didn't bother doing a granola crust). Those took about 13 minutes to bake (350F) and were excellent too. :) I left both tins in the oven after they were done cooking (turn off the heat and crack the door open to let the heat escape) to cool for about an hour before transferring them to the fridge.

Beth's Spicy Oatmeal Raisin Cookies

Ok.. first, I didnt follow the recipe really. I used Avocado instead of shortning. I also used half raisins, and half craisins. They turned out alright. Not to sweet because I used half the sugar and added applesauce. I am working on a "healthy cookie" So we will see. It was moist and chewy but didnt flatten. So i had to smush them down before i baked them.
