Russia’s enormous size accounts in part for its rich culinary diversity. Fertile plains provide grains for breads, brews, pastries and cereals. Rivers and seas offer fish, including the coveted caviar-laden sturgeon. Tundra in the north provides wild game; while the southern and eastern reaches welcomed Middle Eastern and Asian influences. In a land of harsh winters, it’s no surprise that soul-warming soups are a mainstay. Borscht is a beet soup served with sour cream. Cabbage, potato, fish and mushroom soups provide additional comfort during the long Russian winter. Other traditional Russian foods include blinis (thin, yeast-risen pancakes traditionally made with buckwheat flour), pirogi (sweet or savory turnovers), and beef stroganoff. Cucumbers, sour cream and mushrooms are important ingredients, as are dill, horseradish, potatoes, and pickled vegetables. Potatoes took a slow route to popularity in Russia. Despite continual governmental encouragement to plant them, peasants remained skeptical until the 19th century. Today Russians cook potatoes in every conceivable way.

This was really easy and tasty too. Its always a pain to find good quick side dishes and this fits the bill. I made it exactly as the recipe indicated. A weeknight keeper.

Teriyaki Chicken for the Busy Cook

This looks too simple to be any good, but it is! The recipe works really well, and my sceptical husband couldn't believe how good this chicken turned out. Only make sure that you use the meaty parts of chicken with the skin still on - I once tried to substitute skinless chicken breast and it didn't work at all.

Perfect Lemon Curd

This was the first time I've ever made a lemon curd, and it was spectacular. I love lemon desserts, mind you, but this is so quick and requires minimal ingredients; it would be easy to whip together if you had unexpected guests. It's lovely cold or hot off the stove. I sprinkled mine with confectioner's sugar to match some of that tartness.
